Yes. Each room is a separate bookable unit with its own hourly rate and its own diary. Booking the large room leaves the small ones untouched, and no room can take two groups for the same hour.

No, and you should not rely on one. Sell the block with the turnaround inside it, for example a fifty minute session on the hour, so the ten minutes for a wipe-down is time you have already been paid for and the next group still starts when they expect to.

Charge the room hire on the card when the booking is made. A no-show has still paid for the room, and the ones who were never serious do not take a Saturday slot off the page in the first place.
